1. Don’t marinate the chicken longer than ~12 hours. The acid from the lemon juice can start to cook the chicken, which gives the chicken a mushy texture that is not enjoyable. 2. Replace chicken thighs for chicken breast if you want a leaner source of protein. Shrimp also works great.
